Glossary: L-sorbose = L-xylo-hex-2-ulose
Other name(s): Sou1p
Systematic name: D-glucitol:NADP+ oxidoreductase
Comments: The reaction occurs predominantly in the reverse direction. This enzyme can also convert D-fructose into D-mannitol, but more slowly. Belongs in the short-chain dehydrogenase family.
